Piave Cheese PDO is one of the most distinctive dairy products of the Belluno region. It takes its name from the historic Piave River, which flows through these Alpine valleys.
It is a hard, cooked-curd PDO cheese, produced exclusively in the province of Belluno using high-quality cow’s milk. Its flavour is sweet and intense, yet never sharp. The aroma is full and balanced, with notes that recall Alpine herbs and wildflowers. For this reason, Piave cheese is easily recognisable at every stage of ageing.
The production of Piave cheese dates back to the late 19th century, with the establishment of the first mountain cooperative dairies in the Belluno area. Over generations, this knowledge has been passed down, preserving a strong bond between product and territory.
Only milk from local Belluno farms is used in production. As a result, quality, traceability and respect for the environment are guaranteed. Piave cheese is available in four ageing stages: Fresh, Medium, Aged and Piave Oro, each offering a distinct expression of the same balanced character.
Today, Piave cheese is appreciated for its culinary versatility. It is mainly enjoyed cut into slices, often paired with jams, honey or fruit preserves, or used as an ingredient in both traditional and modern recipes.
It features in dishes such as Piave cheese risotto, pairs beautifully with gnocchi, and lends itself to creative appetisers, where simplicity highlights flavour.
Piave cheese holds the Protected Designation of Origin (PDO) status and is also recognised as a Traditional Agri-Food Product (P.A.T.), protecting its heritage and quality.
