From the end of the ‘800, a lot of little cooperatives were born in the area of the Velbelluna produceding, in turn, this different types of cheese.Nowadays these structures are no longer used fro this scope. At a medium maturity stage the Casèl Bellunese has a sweet flavor but with longer maturation it acquires a spicy flavor.
