Kodinzon and kodinze

A Journey Through Time, Told Through Taste

These traditional delicacies, made from carefully processed local apples, are a true gastronomic treasure that reflects the history and cultural identity of the Belluno area.

Kodinzon is a traditional apple paste made from ancient local varieties such as Rosetta and Renetta apples. After being peeled and cut into pieces, the apples are slowly cooked until they form a thick purée, which is then dried. The result is a naturally sweet apple sheet, with no added sugar or preservatives, rich in fiber and vitamins. It is perfect as an energy-boosting snack, easy to carry in a backpack during mountain hikes, or as a creative ingredient for unique desserts.

Kodinze, on the other hand, are simply thin slices of dried apples, prepared according to a traditional fruit-preservation method that once ensured an energy-rich food supply throughout the year. They can be enjoyed on their own, added to mulled wine, or used in the preparation of cakes, tarts, and other baked goods.

These apple-based specialties are mainly available during the autumn and winter months at local farms and selected retailers in the province of Belluno, particularly in Sospirolo, Belluno, Sedico, Feltre, Agordo, and the Alpago area.
