Its particular name is traced back to the habits that the herdsmen had to recover the residues of the curd that “popped” out from the molds during the molding phase. In local dialect “schizar”.
Serving suggestions:
the Schiz goes very well with Polenta and Pasta but it is also used to prepare sweet dishes such as the “ donut” shaped cake with Schiz and pears. A very tasty dish is the Tagliatelle kind of pasta with schiz and rocket.
