The peeled fruits are chopped and cooked until you get a puree that is spread over a large baking pan and left to dry in a drying room. It gives few millimeters thick leaves, which are cut into small strips or bars.
Preservatives or sugars are not added, it is a natural and high-calorie product, enough to have been a precious companion in some of the most inaccessible and inhospitable corners of the earth, from the heights of Himalaya to those of Kilimagiaro,to Antarctica.
The name comes from ”kodinz”, that in local dialect indicates just the slice of a dried apple.
