The term <em>\u201csponcio\u201d<\/em> comes from the local dialect and refers to something that \u201cpricks\u201d or \u201cpierces.\u201d Over time, this hardy plant has perfectly adapted to the harsh mountain climate of the Province of Belluno.<\/p>\n\n\n\n<p>Traditionally stone-ground in historic water-powered mills, Mais Sponcio produces a highly prized semi-wholemeal corn flour. This flour gives traditional mountain polenta its characteristic golden color, enriched with small brown flecks that add both rustic charm and visual appeal. Polenta made with Mais Sponcio is dense, firm, aromatic, and full of character\u2014an authentic local specialty that truly deserves to be tasted.<\/p>\n\n\n\n<p>Production is safeguarded by the Consorzio del Mais Sponcio, which brings together Belluno-based farmers within the agricultural cooperative La Fiorita.
