It takes its name from the historic <strong data-start=\"2701\" data-end=\"2716\">Piave River<\/strong>, which flows through these Alpine valleys.<\/p>\n<p data-start=\"2761\" data-end=\"3116\">It is a <strong data-start=\"2769\" data-end=\"2801\">hard, cooked-curd PDO cheese<\/strong>, produced exclusively in the <strong data-start=\"2831\" data-end=\"2854\">province of Belluno<\/strong> using <strong data-start=\"2861\" data-end=\"2888\">high-quality cow\u2019s milk<\/strong>. Its flavour is <strong data-start=\"2905\" data-end=\"2926\">sweet and intense<\/strong>, yet never sharp. The aroma is full and balanced, with notes that recall <strong data-start=\"3000\" data-end=\"3032\">Alpine herbs and wildflowers<\/strong>. <strong data-start=\"3034\" data-end=\"3053\">For this reason<\/strong>, Piave cheese is easily recognisable at every stage of ageing.<\/p>\n<p data-start=\"3118\" data-end=\"3394\">The production of Piave cheese dates back to the <strong data-start=\"3167\" data-end=\"3188\">late 19th century<\/strong>, with the establishment of the first <strong data-start=\"3226\" data-end=\"3258\">mountain cooperative dairies<\/strong> in the Belluno area. <strong data-start=\"3280\" data-end=\"3300\">Over generations<\/strong>, this knowledge has been passed down, preserving a strong bond between product and territory.<\/p>\n<p data-start=\"3396\" data-end=\"3704\">Only <strong data-start=\"3401\" data-end=\"3434\">milk from local Belluno farms<\/strong> is used in production. <strong data-start=\"3458\" data-end=\"3473\">As a result<\/strong>, quality, traceability and respect for the environment are guaranteed. Piave cheese is available in <strong data-start=\"3574\" data-end=\"3596\">four ageing stages<\/strong>: Fresh, Medium, Aged and <strong data-start=\"3622\" data-end=\"3635\">Piave Oro<\/strong>, each offering a distinct expression of the same balanced character.<\/p>\n<p data-start=\"3706\" data-end=\"3935\">Today, Piave cheese is appreciated for its <strong data-start=\"3749\" data-end=\"3773\">culinary versatility<\/strong>.
