Hergestellt wird er aus der <strong>frischen K\u00e4semasse von gerade gemolkener Milch<\/strong>, die nach \u00fcberliefertem handwerklichem Wissen verarbeitet wird.<\/p>\n\n\n\n<p>Sein besonderer Name erz\u00e4hlt vom Alltag auf der Alm: Er leitet sich von der Gewohnheit der Senner ab, die St\u00fccke der K\u00e4semasse aufzufangen, die w\u00e4hrend des Formens aus den Formen \u201eherausspritzten\u201c. Im lokalen Dialekt bedeutet <em>schizar<\/em> \u201edr\u00fccken\u201c \u2013 ein einfacher Handgriff, der f\u00fcr Einfallsreichtum und Gen\u00fcgsamkeit der b\u00e4uerlichen Kultur steht.<\/p>\n\n\n\n<p>Lange Zeit galt Schiz als schlichtes Lebensmittel, wurde jedoch <strong>in den letzten Jahrzehnten neu entdeckt und gesch\u00e4tzt<\/strong> \u2013 dank seines <strong>milden Geschmacks<\/strong>, der weichen Konsistenz und seiner gro\u00dfen <strong>Vielseitigkeit in der K\u00fcche<\/strong>. Fr\u00fcher ein klassischer Begleiter der Polenta auf der Alm, ist er heute Bestandteil einer K\u00fcche, die Tradition und Kreativit\u00e4t verbindet.<\/p>\n\n\n\n<p>Am bekanntesten ist die Zubereitung <strong>in der Pfanne gebraten<\/strong>, bei der sich au\u00dfen eine goldene Kruste bildet, w\u00e4hrend das Innere weich bleibt. Serviert mit <strong>frischer Sahne<\/strong> und einer gro\u00dfz\u00fcgigen Scheibe <strong>Polenta aus Sponcio-Mais<\/strong>, z\u00e4hlt Schiz zu den authentischsten Gerichten der bellunesischen K\u00fcche.
