Seinen Namen verdankt er dem historischen <strong data-start=\"4658\" data-end=\"4673\">Fluss Piave<\/strong>, der diese alpinen T\u00e4ler durchzieht.<\/p>\n<p data-start=\"4712\" data-end=\"5066\">Es handelt sich um einen <strong data-start=\"4737\" data-end=\"4783\">hart gereiften DOP-K\u00e4se mit gekochtem Teig<\/strong>, der ausschlie\u00dflich in der <strong data-start=\"4811\" data-end=\"4830\">Provinz Belluno<\/strong> aus <strong data-start=\"4835\" data-end=\"4860\">hochwertiger Kuhmilch<\/strong> hergestellt wird. Sein Geschmack ist <strong data-start=\"4898\" data-end=\"4922\">s\u00fc\u00dflich und intensiv<\/strong>, jedoch niemals scharf. Das <strong data-start=\"4951\" data-end=\"5004\">volle Aroma erinnert an alpine Kr\u00e4uter und Blumen<\/strong> und macht den Piave-K\u00e4se in jeder Reifestufe unverwechselbar.<\/p>\n<p data-start=\"5068\" data-end=\"5311\">Die Herstellung des Piave-K\u00e4ses geht auf das <strong data-start=\"5113\" data-end=\"5138\">sp\u00e4te 19. Jahrhundert<\/strong> zur\u00fcck, als im Bellunese die ersten <strong data-start=\"5175\" data-end=\"5211\">alpinen Genossenschaftsk\u00e4sereien<\/strong> gegr\u00fcndet wurden. Dieses Wissen wurde \u00fcber Generationen weitergegeben und pr\u00e4gt den K\u00e4se bis heute.<\/p>\n<p data-start=\"5313\" data-end=\"5556\">F\u00fcr die Produktion wird ausschlie\u00dflich <strong data-start=\"5352\" data-end=\"5386\">Milch aus regionalen Betrieben<\/strong> verwendet. Dadurch sind Herkunft und Qualit\u00e4t jederzeit gew\u00e4hrleistet. Der Piave-K\u00e4se ist in <strong data-start=\"5480\" data-end=\"5500\">vier Reifestufen<\/strong> erh\u00e4ltlich: Fresco, Mezzano, Vecchio und <strong data-start=\"5542\" data-end=\"5555\">Piave Oro<\/strong>.<\/p>\n<p data-start=\"5558\" data-end=\"5798\">Heute wird der Piave-K\u00e4se besonders wegen seiner <strong data-start=\"5607\" data-end=\"5638\">Vielseitigkeit in der K\u00fcche<\/strong> gesch\u00e4tzt. Er wird bevorzugt <strong data-start=\"5668\" data-end=\"5695\">in Scheiben geschnitten<\/strong> serviert, oft kombiniert mit <strong data-start=\"5725\" data-end=\"5750\">Konfit\u00fcren oder Honig<\/strong>, oder als Zutat in warmen Gerichten eingesetzt.<\/p>\n<p data-start=\"5800\" data-end=\"5942\">Typisch sind <strong data-start=\"5813\" data-end=\"5839\">Risotto mit Piave-K\u00e4se<\/strong>, Gerichte mit <strong data-start=\"5854\" data-end=\"5865\">Gnocchi<\/strong> sowie <strong data-start=\"5872\" data-end=\"5895\">kreative Vorspeisen<\/strong>, bei denen der Geschmack im Mittelpunkt steht.<\/p>\n<p data-start=\"5944\" data-end=\"6141\">Der Piave-K\u00e4se tr\u00e4gt die <strong data-start=\"5969\" data-end=\"6013\">gesch\u00fctzte Ursprungsbezeichnung (D.O.P.)<\/strong> und ist zudem als <strong data-start=\"6032\" data-end=\"6079\">Traditionelles Lebensmittelprodukt (P.A.T.)<\/strong> anerkannt \u2013 ein Zeichen f\u00fcr Qualit\u00e4t, Herkunft und Tradition.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Der Piave-K\u00e4se DOP z\u00e4hlt zu den wichtigsten K\u00e4sespezialit\u00e4ten der Provinz Belluno.
